6 AprIt’s not Good Friday it is GREAT Friday! Here’s looking forward to a weekend full of sunshine, friends and family. Happy Easter, everyone!
Bunny ears to wear on Easter.
The holidays always make me miss my family because we have so much tradition when it comes to gathering to celebrate. Easter Lilies in particular remind me of my parents. My dad always picks up my mom Easter Lilies from the corner florist.
Sugar Easter eggs that my mom had made for my sister and I three or four years ago. I hadn’t seen them since I moved to Texas and was so happy when I found them in one piece.

Why do I keep telling the cashier at Michael’s I’m not interested in their membership card?
5 AprMy friends and I finalized our plans for our Easter celebration. I’m enthusiastically getting ready with a fun dessert to share. Presenting Peepsicles.
Makes 16
Ingredients and Supplies
16 – 11.75 inch sucker sticks
16 glazed donut holes or Donettes
2 packages candy melts in desired pastel colors
A bottle of sprinkles
Parchment paper
1 package of 8 Kellogg Rice Krispies Treats
6 packages of Peeps in whatever colors you prefer
16- 4 inch x 2 inch x 9.5 inch cellophane bags
A spool of ribbon
Instructions
I. The Donuts
A. On a cooling rack, space the donut holes or donettes about a ½ inch from each other.
B. Heat the melting candies per package directions.
C. Use a spoon to drizzle the melted candy over the donuts back and forth so it looks like the icing on Toaster Strudel.
E. Allow the donuts to dry for about 20 minutes.
II. Kellogg Rice Krispies Treats
A. Line a baking sheet with parchment paper.
B. Unwrap and cut the Kellogg Rice Krispies Treats in half.
C. Heat the other color of melting candy in a small bowl (you’ll want the melted candy to fill the bowl about an inch) according to package instruction.
D. Dip half the Treat square into the candy and shake off the excess candy carefully.
E. Then shower with sprinkles to coat the entire dipped area.
F. Allow the Treats to dry on the parchment covered baking sheet. This can take up to 30 minutes since the candy coating is thicker than the drizzle on the donuts.
G. Start steps A-F again for each square until you’ve finished all of them.
III. Assembling the Skewers
A. Thread the donut from the top of the stick until about half way down.
B. Follow with a Peep, then a Kellogg Rice Krispies Treats and then finishing with another Peep.
IV. Packaging the Peepsicles
A. Pull a cellophane bag over the threaded stick to cover the sugary goodness you just created.
B. Lay the Peepsicle on its back on your work surface. Cinch the bag at the bottom and close with ribbon making a pretty bow.

3 AprSo I knew I said I wasn’t going to have any. I ate not one, not two, but three. THREE!
Now let me explain rationalize my dessert eating behavior. I went to spin class, rode 18 miles and burned about the equivalent of 2 cupcakes. So really I only ate one!

Playing With My Food

Sometimes I like to play games with my food. Like today I decided I would eat half the amount of fat that I do in an average week. In the last week I averaged 74 grams of fat per day. The USDA recommends 53 grams for a sedentary woman. If I half my average that puts me at about 37. Look! I can divide.
By 10 AM I had consumed 18.7. Crap, that’s half my goal.
The remainder of the afternoon I ate two oranges and oatmeal. Putting me at a total of 22 grams.
Later came dinner, a cup of peas and a veggie patty. Now my total equaled 29.5.
My protein for the day was lacking so I ended my day with a protein shake made with water. 30.1 grams of fat for the day. I came under my target and I’d say that means I won this game!
