Day 3 – 29 to go

Day 3 was spent getting ready to have friends over for game night that evening.  I ran around cleaning and cooking from 10 AM until 6 PM so my exercise just didn’t happen. :(   Unless of course you consider running home from the grocery store which is only a 4 minute walk so then that put my running at approximately 2 minutes.  Talk about breaking a sweat.

Of course some of my food choices weren’t the best, but what’s a girl to do when she’s at a party filled with tasty treats and sweets?  Let’s hope I can make this goal.   29 days to go!!

FOODS:
*Coffee & a splash of Half & Half*1/4 Cup of Black Beans seasoned with chopped onion, cumin and black pepper*1 Cup of Peas and Carrots*Roasted Vegetable Panini*3 Feta and Spinach Squares*A couple of Pita Chips*A little bit of Fruit (kiwi, banana & orange)*3 vegan Chocolate Truffles*4 Large Marshmallows dipped in Chocolate Sauce*

Hop Aboard the Crazy Train

I was so tired last night, but couldn’t fall asleep. My mind was doing laps in an Olympic sized pool.
If you didn’t already know, I don’t handle stress well. I learned we’re having visitors in two weeks. While I LOVE having guests, I start to think about how I need to get my house together, make plans for meals, clean, arrange work off, etc. It becomes a lot for my pea brain. I go through this same panic each and every time. You’d think I’d have it down by now. But I don’t. So I just accept that I’m going to freak out and panic and complain while trying to clean 1,600 things at once. Then our guests will arrive and it will be fine and we’ll have fun and I’ll think, “Why did I have a melt down?”. Then I’ll remember it’s because I’m deranged.

Martha, get over to my house and make it acceptable. #Thankyouverymuch.

Kitchen Disasters

Here was me this morning.

Today I’m making Roasted Garlic and Broccoli Soup.

Look!  I already measured out the lentils and beans and washed the broccoli!!Image Image

Stupid soup tastes like salty, broccoli water.

Down the drain it goes.

I’m also going to make Peanut Butter Whoopie Pies!

About an hour ago I dumped them in the garbage because they tasted like chocolate cardboard.  YUK!

As my mama always says, you win some you lose some.

Homemade beef jerky in minutes!

First take desired amount of braised beef you prepared for dinner the night before and would like to reheat for dinner tonight and put in a microwave safe dish.  Next hit the microwave time for 3 minutes even though you have the intention of waiting next to the microwave to grab it after about 30 seconds. 

After 5 seconds wander to your bedroom and decide to try on that skirt you bought a few weeks ago in a size too small and try it on to see if it fits yet.  It doesn’t fit yet.

Next apply moose to your nearly dry hair like you’re going to curl it all fancy, but know deep down its going back in a pony tail sans the curls.

Find yourself back in the kitchen wondering what smells like burnt rubber and cow hide.  Open microwave to see your homemade beef jerky!

I had a birthday. That’s not what this post is about, though.

This post is about how my husband came home from work on my birthday.  In his right hand he was carrying a grocery bag.  I was thinking in a sarcastic tone, “Cool.  A bag of groceries is my gift.  How romantic”.  Turns out my gift was the bag of groceries and my husband was going to cook me dinner.  How romantic!  Let me back up a bit.  Kat Daddy doesn’t didn’t cook.  Anything.  Ever.  OK, to his credit, he would scramble and occasional egg or two.  On my birthday night, he proved he can cook.  Now I’m never going to let him go back.  He made the most scrumptious chicken parmeseana.  Get this…the reason he chose to mak ethis dish was because I had been talking about my favorite restaraunt back home and how I couldn’t wait to eat there next time we fly home. 

We were going to go out for Thanksgiving dinner.  Since I married a chef, we’ll be staying in and making our own feast.

Tonight we made some pizza.  Well not we, I made some pizzas.  I made them even though the crust was already made.  Thanks, Boboli!

Mmmmmmm, let’s call this one Meaty Goodness.  Pepperoni, Salami and Sausage. :D

Okay, hold your hats for this one, folks.  BBQ Chicken Pizza!Smoky gouda mixed with mozzarella cheeses over a layer of BBQ sauce.  Then topped with plenty of grilled chicken, red onions and cilantro.  YUM!!!!!!!!

Now I’m going to make some hot chocolate for dessert.

Hot Chocolate

One of our household favorite drinks is scotch Hot Chocolate. We’ve even abbreviated the name to “HC”. Here it is used in a sentence. “Would you like HC with your toast?”

Anyway, make this beverage your fall/winter staple and you will gain 15 pounds have everyone in the house asking for a piping hot mug of HC or a styrofoam cup if none of your mugs are washed like at my house.

HC

1 c. milk (the fattier the milk, the tastier your drink will be)
2 tbs. cocoa powder
2 tbs. sugar
½ tsp. cinnamon
Marshmallows or whipped cream (optional, but highly recommended)

Heat milk in a small sauce pan.  Add cocoa powder and stir with a whisk until well combined.  Stir in cinnamon.  Serve hot with marshmallows, whipped cream or both.

October is a fun month. Fall makes is presence with cooler temps and shorter days. My birthday occurs and I get older. OK so maybe the getting older part is no longer fun. Then there’s halloween! What’s not to love about pumpkin patches, carmel apples, ghosts, ghouls and trick or treating!?

I found some cute items that are sure to make any person feel festive.

Feeling Creative

As we all gear up for the Holidays, now is an excellent opportunity to think about ways to make gifts to perhaps save money and share something made by you. Listed below are ideas that sprung into my mind. I also recommend visiting Martha Stewart’s website for ideas or even perusing your local fabric or craft store for ideas.

Baked goods are often a good one since most enjoy sweets. Cookies are an excellent choice along with candy or how about a gingerbread house.
